We love Summer picknicks, but don’t want to make a fuss about the food we’re taking in our picknick-basket. Small snacks like this artichoke dip are perfect.
They sell this dip alongside olives and tapenades at local markets in Southern Europe, but it’s fairly easy to make it yourself. Plus, it only contains healthy ingredients.
Ingredients:
a can of artichoke hearts (supermarket)
3 tbs of olive oil
3 cloves of garlic
juice of one lemon or lime
6 fresh basil leaves
Put all the ingredients in a small kitchen robot and blend until you get a structured mass. You may have to stir once or twice in between. That’s it!
Serve it with origan & olive crackers or slices of a freshly baked baguette. A nice drink to go along is Italian Peroni beer. The artichoke dip enhances the subtle citrus notes of the beer.
