If you haven’t yet heard of the spiralizing food trend, it’s time you jump on the bandwagon! A spiralizer is an amazing kitchen tool that lets you cut and shape vegetables in unique ways – most famously, it can turn a courgette into a spaghetti-like form.
Lately I’ve been addicted to the work of American blogger Ali Maffucci, founder of the website “Inspiralized.” All of her recipes are made with the help of a spiralizer, and shes’a super talented and creative chef. You won’t BELIEVE some of the amazing things this machine can create.
Last night I was inspired by Ali’s Thai Pork Peanut Coconut Red Curry recipe, served over sweet potato rice. (Since I was on a meat-free day, I substituted the pork for shrimp).
I couldn’t believe how quick and easy it was to make – not to mention satisfying! The flavours are delicious and the sweet potato rice has an amazing texture. All I had to do was peel and spiralize the sweet potato, throw it in a food processor to chop it to bits, and then boil it for a few minutes in chicken broth.
When my coconut red curry sauce was ready, I threw that on top of the rice and voila. Dinner was ready in 20 minutes.
I love using veggie “noodles” or “rice” instead of the real deal, since they are gluten free but not lacking in flavour. It’s definitely a great option as we head into the summer months!
