Lately I’ve got a bit more time on my hands so I started baking. I love cooking, but baking is something else. I am more a savoury than a sweet kinda girl, so that’s why I actually never baked something before. Except that one time, when I tried to make macaroons – but failed epically.

I have a new addiction. Luckily it’s a healthy one. I can’t get enough of this snack made with nori, avocado and hummus. Nori is the edible seaweed that’s also used when making sushi. It’s full of essential nutrients like protein, iron, vitamin A, B & C and contains only 4 calories per sheet. Soooo, no need to cut back on this snack, which is also very easy to make. Yay!

It might sound a bit lame, but I think food is about sharing. Sharing meals but also sharing ideas and recipes. My best friend Myrthe once made this beautiful and easy risotto for me, and I’ve impressed many others with it since that day.

Breakfast is my favorite start of the day. I know most people don’t bother eating in the morning because they are too busy getting ready, washed and dressed for the day. I am one of those odd people who sets her alarm early so I can take all the time I need for tea, breakfast and the newspaper. If I don’t take that time, I feel moody and rushed all day long.

As I told you before: I love Asian food. My boyfriend and I often treat ourselves to dim sum for lunch at our favorite local Chinese restaurant. Enjoying all these different delicious bites is one of my favorite things to do on a lazy weekend day.

I always get a bit hungry around eleven in the morning. Breakfast seems ages ago but lunch is still two hours away. To prevent myself from munching on the candies on my colleague’s desk or a chocolate bar from the vending machine, I bring my own relatively healthy and very delicious date & nut bars to the office. They are easy to make, gluten free, there’s no sugar added and you can adjust them to your own taste, with your favorite nuts and seeds.

It doesn’t matter how much I’m in a hurry in the morning: I won’t forget my stinging wonder plant! I drink a cup of nettle tea at breakfast every day. And that is not only because I like the taste of it. Apart from giving a nasty sting, nettle is one of the wonder plants nature has blessed us with.
