Breakfast is my favorite start of the day. I know most people don’t bother eating in the morning because they are too busy getting ready, washed and dressed for the day. I am one of those odd people who sets her alarm early so I can take all the time I need for tea, breakfast and the newspaper. If I don’t take that time, I feel moody and rushed all day long.

I don’t expect you to imitate my morning ritual, but please try to eat properly before you leave your house in the morning, it will make you feel healthier and happier. This granola is extremely easy to make. In the weekend that is, so during the week you just have to toss it in a bowl in the morning with a little (soy, almond) milk or yoghurt and some (dried) fruit. Quick, healthy and tasty.

Ingredients:

Quinoa seeds (50 g)
50 g of Quinoa puffs (I use the ones from NatureCrops, if you can’t find these, you can use extra quinoa seeds)
Quinoa flakes  (50 g)
Oat flakes  (100 g)
Flax seeds (30 g)
Pumpkin seeds (30 g)
Sunflower seeds (30 g)
Mixed nuts
(100 g)

Apple juice (100 ml)
Oil (4 tablespoons. I use peanut oil, but you can use any kind) 

1.  Preheat the oven at 180 degrees Celsius.
2. Toss all dried ingredients in a big bowl.
3. Add the apple juice and oil. Mix it well.
4. Spread on a oven plate.
5. Bake for 20 minutes. (Toss once or twice in between.)
6. I always store my granola in a glass canning jar.
