Thursday Treat: The Gingerbread Man

Gingerbread_menFor those who follow us on Instagram you might have seen an image of freshly baked Gingerbread Men (actually gingerbread women in our case) coming by. Last week we’ve baked our own with the help of Juan, pâtissier at the ANDAZ Amsterdam.

Of course we kindly share the recipe with you and pictures of the making of. So if you are bored, or just trying to escape your inlaws, just go bake yourself some gingerbread for a few hours.



Ingredients (for the dough):
400 g of honey
100 g of sugar
640 g of flour
1 tbs of cinnamon powder
18 g spice- or speculoos mix
60 ml of milk
1 egg
17 g of sodium bicarbonate
20 ml of lemon juice
the peel of 1/2 a lemon

a Gingerbread cookie mold
a basting brush

For the spice mix if you want to make it yourself:
1 tbs of nutmegg
1tsp of cloves
1 tbs of star anise
1 tsp cardamon
1tsp of coriander powder
25 g of caster sugar
1 vanilla pod
25 g of cinnamon
1 tbs of dried gingerpowder

For the icing:
20 g of potato starch
160 ml water

•Heat the honey and sugar in a pan until 70 °C. Let it cool down until 30 °C
•In a separate bowl, mix the ingredients for the spice mix
•In an other bowl mix the sodium bicarbonate with the milk until it has completely resolved
•Insert all the remaining ingredients -including the spice mix and the milk- to the chilled syrupy mixture. Let it all rest for 30 mins

•Roll the dough in a lap of 4mm
•Spread a piece of baking parchment on a baking tray. Use the Gingerbread cookie mold to make your shapes. Leave enough space between them when you lay them out on the tray so they won’t stick during baking, and glaze them with a little milk
•Bake the Gingerbread men  goldenbrown in 8-10 mins in a preheated oven at 200 °C
•In the meantime make the icing. Spread the potato starch on a baking tray and place it in the oven. Roast it until it’s goldenbrown
•Then mix it with water and heat it until boil
•Take the Gingerbread men out of the oven and smear them directly with the icing. When that’s done prepare what you need for the decoration (which is up to you)
