Healthy Raisin Bran Muffins

I want to switch up my breakfast routine, so I’ve just made these easy raisin bran muffins. I added some extra flax seeds, and used ¼ cup coconut oil instead of margarine.

 

Ingredients
1 1/4 cup raisin bran
1 cup whole wheat flour
2 1/2 teaspoons baking powder
3/4 teaspoon nutmeg
1/4 teaspoon ground cloves
1 tablespoon milled flax seed
3 tablespoons water
1/3 cup milk
1 egg
3/4 cup brown sugar
1/4 cup margarine
2 apples, peeled and chopped

Directions

Preheat oven to 350 F.

Combine dry ingredients into large bowl. Combine wet ingredients into smaller bowl. Add wet ingredients to dry ingredients (the key to muffins is not over-mixing, so mix until the batter is just moistened). Spoon into greased muffin tins up to the lip of the tin.

 

Bake 20-30 minutes. They are ready when a toothpick inserted into the muffins comes out clean.

Note: The brown sugar can be substituted with the same amount of maple syrup. You can also sub the margarine for applesauce.
