Here is one of my mom’s recipes for a delicious cake that’s a family favourite.
It’s very quick and easy to make, so if you have unexpected company it’s fast to throw together and will certainly please your crowd.
Mix: 1 cup sugar ½ cup butter, room temperature 3 cups flour 3 tsp baking powder 1 ½ cups milk 4 cups of fruits of your choice (fresh or frozen), cleaned and chopped (best are peaches, apples, blueberries or plums) Mix first 5 ingredients together to form a thick dough. Do not over mix. Spread into 9×13 inch glass baking dish or a round spring-form pan. Evenly spread fruit on top in a nice pattern. Top with the following crumble blend: 1 cup sugar 1 cup flour ½ cup butter.
Blend together with a fork until all lumps are about the same size; you don’t want massive clumps of butter – they should be no bigger than the size of a marble. Spread evenly on top of fruit. Bake at 350°F for 40 minutes.
