It is not to be compared to the delicious paëlla I recently had at Yemanya on Ibiza, but it does give me a little Mediterranean vibe when I make this dish. And it’s so easy! Check the recipe after the jump>>>>>

Quick fix paëlla-like yellow rice dish

Ingredients (4 pers):

325 g yellow saffron rice
1 medium size red onion
3 spring onions
2 cloves of garlic
1/2 pack of deepfrozen green peas
1 chorizo sausage
250 g of pink shrimps or gamba’s
2 tbs of chili oil
surimi sticks (optional)
cooked mussels
fresh parsley

Chop the onion and garlic. Put some oil in a big frying pan or wok, and glaze the onion and garlic. Add the green peas, the shrimps and the cooked mussels*. Stir gently, turn down the gas a little and put a cover on the pan.

In the meantime cook the rice like the instructions say on the package.

Use half of the chorizo sausage and cut it in small dices. Chop the spring onions.
Throw the cooked rice in the pan with the green peas, shrimps and mussels an stir the whole. Add the chorizo and spring onions. Sprinkle two table spoons of chili oil over it, stir again and serve with some fresh parsley.

*(you can use surimi instead of mussels if you prefer)
