Digitalicious: Hot ‘n cold almost healthy tricolore goat cheese bacon spinach salad with tomato, avocado and radish

On a Summer evening nothing’s better than eating a home made salad on your roof terrace. That’s what Digi E’s doing every evening (when it’s not raining ofcourse.. and it has been raining a lot the last couple of months). Try this delicious salad at home! We’d love to hear if it tastes as good as the salad above. We dare you.

INGREDIENTS
– goat cheese with honey, 250 grams
– bacon, 100 gramme (you can leave the bacon out if you want)
– spinach 500 gramme
– 1 avocado
– 2 tomatoes
– 10 radishes
– a few pine nuts
– olive oil
– balsamic vinegar
– pepper
– salt

HOW TO
Warm up the oven 10 minutes at 200 degrees. Put the goat cheese on a plate and warm it up for 10 minutes. Bake the bacon in the frying pan and roast the pine nuts (in another frying pan). In the meantime chop the tomatoes, radishes and the avocado into tiny slices. When the goat cheese looks a little bit melted, it’s perfect.

Put the spinach on a plate, scatter the tomato, radishes and avocado slices on it, place the melted goat cheese on the tricolore salad and top it off with pine nuts and bacon. Finish it with oil and balsamic, pepper and sea salt (not to much!).
